Fruit is fickle. Apples, pears, grapes, plums and cherries all give up their aroma differently, and a big copper pot gives you room to learn how each one behaves. The 25 gallon EZ Kit is our Advanced Model in kit form, with the EZ Seal Cap and a 4 inch thumper port. It's the bigger sibling of our 15 gallon kit.
Brandy, schnapps, and fruit spirits
Brandy and traditional fruit schnapps are pot-still spirits at heart. The goal is to carry the fruit through the copper and into the glass, and that comes down to heat control and careful cuts. A 25 gallon pot holds enough fruit wash to run it properly. Each run is also long enough to see the shift from heads to hearts to tails. Copper has long been the metal of choice for this work. When you want more strength from each pass, add a thumper through the 4 inch port.
Botanicals and oils
A larger pot also gives you space to experiment with botanicals like juniper, citrus peel and herbs. That's a different kind of extraction, where you coax aroma out of plants. A setup like this can also be used to distill essential oils, which is one of the legal everyday uses for a still.
