Rum is a sugar story. Molasses, cane juice, or raw sugar is fermented and run through copper. The spirit that comes out can be light and grassy or dark and heavy, depending on the choices you make. The 20 Gallon Complete Copper Moonshine Still is a craft distillation unit with the capacity to make those choices at a serious hobby scale.
What makes 20 gallons a good rum size?
Rum rewards patience. A bigger batch means a longer run, and a longer run gives you more time to watch the spirit change. First come the bright, solvent-smelling heads, then the round, sweet hearts, then the oily tails. Some rum makers keep a little of the tails for weight. Twenty gallons lets you collect enough of each to compare.
Molasses vs. cane: run your own trial
Ferment one wash from blackstrap molasses and another from cane juice or panela. Run them the same way, cut them the same way, and line the jars up. That's the alchemy of it: same copper, same heat, completely different spirit.
Not only for rum
