You assemble the copper and learn how every joint and part fits, so by the time you fire it up you understand the whole system. That's the scientist's half of distilling. The alchemist's half starts when the vapor moves.
Built around whiskey and rum
In whiskey and rum the wash matters. You want to keep the grain or molasses character, not strip it away. A copper pot still is the traditional choice for that. The 4 inch thumper port on this kit lets you add a thumper to the line. A thumper works like a second distillation in one run: vapor passes through it and gains strength. That gives you one more thing to adjust as you dial in flavor. Thumpers are sold separately on this site in sizes from 3 to 30 gallons.
Why 15 gallons
Fifteen gallons is a comfortable middle ground. It's a real step up from a tabletop starter, but it isn't the biggest kit. It gives you room to repeat a recipe, compare runs, and keep notes that actually mean something.

A still is legal to own in the US, and it can also distill water or essential oils. Distilling alcohol requires a federal TTB permit, so follow federal, state, and local law.
